Harry's Traditional Style
Beef Bourguignon

Ingredients:
2kg Oyster Blade
1 bottle red wine
2.5 litre beef stock
500g Bacon lardoons
12 Pearl onions
12 button mushrooms
Thyme
bay leaf
Brandy (optional)

Previous Day:
Cut blade into 4.5cm cubes, marinate overnight in red wine, thyme, bay leaf and Bouquet Garni.

Next Day:
Preheat oven 180 deg, in a large casserole dish, heat small amount of oil and brown meat cubes a couple at a time, being sure not to over crowd as this will cause stewing. Do this to all meat. Strain meat of any excess fat and cover with stock and red wine, bring liquid in casserole dish to simmer and skim any residue that had surfaced. This will result in a clearer cleaner gravy.
To this add bacon lardoons, mushrooms and pearl onions.
Cover with tinfoil and slow braise four approximately 2 hours.
Serve with creamy mash and roasted vegetables.
