Ocean Street

Ellmo's on Ocean Street is a real foodies paradise, quite unequalled in the Maroochydore area. Five-star chef Andrew Strange and his kitchen brigade make everything on the premises from breads and pastas to stocks and sauces so you are sure to get a beautifully freshly prepared sensation.

You can choose from our full a la carte menu or enjoy one of our fabulous lunchtime specials which are a very affordable 2 courses for $26.00 or 3 courses for $32.00.

Kangaroo Rump

 

Ingredients:
50ml olive oil
4 x 200g kangaroo rump
Tatin
2 red onions
40g butter 25g sugar
1 sheet bought rolled puff pastry

Pannacotta:
50ml cream
200ml milk
50g parmesan
3tsp powdered gelatin
1 spring rosemary
1 clove garlic
salt and pepper

Sauce:
300ml beef stock
50g red grapes
40ml basil oil

Pannacotta:
Infuse milk over low heat with rosemary and garlic. In separate pan, melt parmesan in cream, strain milk onto cream, add gelatin and seasoning. Pour into individual moulds and set in fridge overnight.

Sauce:
Crush grapes in a pan, add 25g sugar, add stock and cook until reduced by three-quarters. Put aside.

Tatin:
Place butter then sugar, then onions into a cold fry pan suitable for oven use. Check regularly that onions are cooling but not burning. Preheat stove to medium heat. After 15 minutes cover onions with pastry, fold corners in and bake in oven 200 degrees Celsius for 20 minutes or until pastry is cooled. Season kangaroo, heat olive oil in fry pan, seal kangaroo for two minutes on each side, finish in oven, cook for 8-10 minutes on medium. Rest on plate for five minutes, slice and serve.

Assemble and drizzle with basil oil.
