House Smoked Salmon -
Lobster Medallion -
Seaweed Slaw -
Wasabi Dressing

Ingredients:
1 side Salmon (pin boned & skin on)
1 Rock Lobster (cooked)
200g Seaweed Salad
1tsp Wasabi Powder
4 cups Shaved Wood Chips for smoking
150g Homemade or Good Quality Mayonnaise

Put wood chips in a smoker and place over a gas burner on a high heat. Once it starts smoking remove the lid and place the salmon on the rack. Replace the lid and turn the burner down to a low to medium heat. Smoke the salmon for approx 10 mins, Or until the salmon is medium rare. Remove from the smoker and place in the fridge.

Remove the meat from the lobster and slice into 10 medallions. Combine Wasabi powder with the mayonnaise and mix well until smooth. Once the salmon has cooled, cut into 10 portions and remove skin. Place the portions on a tray and place in a warm (130) degrees C) for 5 mins before serving. To serve, place salmon on a plate, top with the lobster medallion and the seaweed salad. Dress around the plate with the Wasabi mayonnaise and serve. Enjoy.
